Smash burgers are already hard to beat. Thin patties, crispy edges, melty cheese, and a toasted bun. But if you start them low on a pellet grill first, you pick up just enough wood-fired flavor to take things somewhere special.

  • Cooking oil (vegetable, canola, or similar) 
  • 1 tbsp. garlic powder
  • 2 tbsp. kosher salt
  • 2 tbsp. cracked black pepper
  • 2 lbs. 80/20 ground beef
  • 8 hamburger buns
  • 8 slices sharp cheddar
  • Favorite toppings (recommended: lettuce, tomatoes, red onions, pickles, bacon jam)

Preparation


  1. Add your desired hardwood pellets to the hopper; we prefer the Oakford Heritage Blend for its clean smoke and well-balanced flavor.
  2. Set your pellet grill to 225°F on the smoke setting using the digital controller.
  3. Get all your toppings, buns, and cheese ready for easy assembly.
  4. Shape your ground beef into eight 4-ounce balls and keep them chilled until ready to cook.

Cooking Instructions

    Place your meatballs on the top grate, then close the grill lid to smoke for 15 minutes at 225°F.

    Open the lid, remove the smoked meatballs, and set them aside.

    Place a cast-iron pan or griddle directly onto the bottom cooking grid.

    Wait for the griddle to become smoking hot before proceeding: the heavy-duty grid’s thermal mass will help create the perfect crust.

    Add cooking oil to your pan or griddle’s surface.

    Return the meatballs to the grill, spacing them 2 inches apart on the griddle.

    Smash them down using a spatula.

    Season the patties with garlic powder, salt, and pepper.

    Close the lid and sear the patties for 2 minutes, then flip and repeat on the other side.

    Open the lid, add a slice of cheese to each patty, then close again to melt.

    After 4 minutes total, your patties should be medium. For well-done, extend the cooking time to 6 minutes.
