Flowers and candy are fine and dandy, but what mom really wants this Mother’s Day is to know how much you care. And what better way to show her than with a beautiful Mother’s Day brunch? 

Your next question probably goes: "...but what to make!?” We’re way ahead of you. This griddle-top grill recipe for crepes with fresh berries and whipped cream cheese filling not only tastes amazing, it also presents beautifully! A most worthy dish for mom on Mother’s Day. 

Ready to give mom the Mother’s Day she deserves? Gather your ingredients, fire up your Daytona Griddle, and follow the steps below to start the day off right, with the most deliciously decadent crepe breakfast she’ll enjoy all year.

For the crepes:

  • 1 cup all-purpose flour 
  • ½ cup milk
  • ½ cup water
  • 3 large eggs
  • 2 tbsp. unsalted butter (melted)
  • 2 tbsp. sugar
  • 1 tsp. vanilla extract 
  • ½ tsp. salt

For the cream cheese filling:

  • 1 cup heavy whipping cream
  • 8 oz. cream cheese
  • 1 tsp. vanilla extract
  • 1 cup granulated sugar

For the berry sauce:

  • 2 cups mixed berries
  • ½ cup sugar
  • 1 tbsp. cornstarch

Preparation


  • To make your crepe batter, put all the crepe ingredients into a blender and mix till smooth. Refrigerate the batter for about an hour or so, though even just 15 minutes will do – just to let some of the bubbles settle.
  • While your crepe batter is chilling, preheat your Daytona Griddle to medium-high heat.


Cooking Instructions

    Pour about ¼ cup of your crepe batter onto your preheated griddle. Cook for about 1 minute, then flip the crepe over and cook the other side for about 30 seconds. Set cooked crepe aside and repeat with remaining batter.

    Meanwhile, sauté your berries with a sprinkle of sugar in a separate pan until they become slightly juicy, and let the sauce reduce and thicken.

    In a large mixing bowl, stir together the cream cheese, sugar, and vanilla extract, then use a fork to manually whip the cream until it’s nice and fluffy. That’s right. You gotta work for mom’s happiness!

    One crepe at a time, spread some cream cheese filling right down the middle. Then, add your berries on top of the cream. Roll each crepe up, top with additional berries, and another sprinkle of sugar. And, just like that, you just made mom seriously happy on Mother’s Day. Nice work!
