Fresh, irresistible, and, yes – even keto-friendly for that health-conscious friend of yours – you might want to double up on the recipe. These irresistible crisps won’t last until halftime.

- 1 cup sharp cheddar, shredded
- 1 large jalapeño pepper, fresh
Preparation
- Pre-heat your Daytona™ Flat Top Griddle to medium heat.
- Core your jalapeño pepper by slicing it lengthwise, then scraping the seeds out using a spoon.
- Cut the de-seeded jalapeño into thin slices.
- Grate your sharp cheddar cheese. Alternatively, skip this step by buying it pre-shredded. However, we prefer the flavor and texture of freshly shredded cheddar.

Spoon 16 heaps of shredded sharp cheddar cheese onto your pre-heated griddle top.

Gently flatten the cheese mounds using the back of the spoon, leaving them at least one inch apart.

Add sliced jalapeño peppers to the centers of the cheese piles.

Close your griddle’s lid and allow the cheese to turn brown and crispy, forming crunchy disks. This should take around 12 minutes.

Use a spatula to remove the disks from the griddle and allow them to cool down for a few minutes.

Move the cooled disks over onto a platter and serve.
